Christmas Cookies

These cookies are the perfect holiday twist on the classic chocolate chip cookie. The butter dough, chocolate chunks, and crushed peppermint create the perfect (and easiest!) cookie for Christmas.


Because the recipe uses butter rather than shortening, the cookies are thin and chewy. If you want thicker, cake-ier cookies, just swap out the butter for shortening like Crisco!

 

Personally, I prefer more cookie than chocolate; and these cookies definitely have more dough than chocolate. But, if you are wanting more chocolate, you could easily add more chunks than the recipe suggests! Or, for an alternative type of cookie, you could add a Hershey's kiss in the middle of the cookie. I have also made this recipe with a milk chocolate kiss in the middle, but white chocolate peppermint kisses would be delicious as well!


Christmas Cookies

Makes about 45 cookies

INGREDIENTS

  • 1 cup unsalted butter (room temperature)

  • 1/2 sugar

  • 1 cup brown sugar

  • 1 tsp vanilla

  • 1/2 tsp water

  • 2 eggs

  • 2 1/2 cups flour

  • 1 tsp baking soda

  • 1 cup chocolate chunks

  • ~ 1 cup crushes candy canes

  • *If using Hershey's kisses, ~45 chocolate kisses

DIRECTIONS

  1. Preheat oven to 350ºF and line baking sheet(s) with parchment paper

  2. Combine butter, sugar, and brown sugar in a large bowl and mix until light and fluffy

  3. Add vanilla, water, and eggs and mix until well combined

  4. Add in flour and baking soda and mix until thoroughly combined

  5. Mix in chocolate chunks

  6. Set cookie dough aside and crush the candy canes in a small bowl

  7. Once candy canes are crushed, take about a tablespoon of dough and roll it into a ball

  8. Roll the tbsp of dough into the crushed peppermint to thoroughly coat the outside of the cookie

  9. Place dough balls onto the baking sheet. Be sure to give adequate space between each cookie as they will spread in the oven

  10. For more ~aesthetically pleasing~ cookies, place a couple of chocolate chunks on the top of the dough ball before baking

  11. Bake the cookies at 350ºF for about 10 minutes

  12. Once cookies are baked, transfer to cooling rack or simply off the baking sheet to cool

  13. *If using Hershey's kisses, press a chocolate kiss into the center of the cookie after baking (while the cookie is still warm)

  14. Eat immediately or wait until they are cool!
